2 cups Olive oil
1 tsp Salt
3/4 tsp Thyme
3/4 tsp Basil
1/2 tsp Oregano
1-1/2 tsp Celery salt
1-1/2 tsp Black pepper
1-1/2 tsp Dried mustard
4 tsp Paprika
1 Tbs Garlic salt
1-1/2 tsp Ground ginger
1-1/2 Tbs White pepper
1 cup Flour, white
2 cups Buttermilk
2 lbs Chicken thighs, boneless

Pour the oil into a small frying pan, preferably cast iron, and heat on the stove on medium until hot.
Mix all dry ingredients together and spread out on a small plate.
Pour the buttermilk into a small bowl.
Lightly dust each piece of chicken with the flour mixture, dip it in the buttermilk until completely coated, then coat thoroughly with the flour mixture. Make sure the chicken is completely coated. Place into the hot oil.
Fry the chicken for 15 minutes, turning so both sides are fried equally.
Remove the chicken from the oil and let it drain for 5 minutes.
